Sheeter maintenance day.

I bought this sheeter used, and the belts were at the end of their lives. The right one broke before I did anything about it, so when the left one started to go, I knew it was time.

We managed to fit this project in with the help of my dad who bought the necessary tools that we didn't know we needed when we replaced the first side.

I still need to put a few parts back on, but she should be good for a while now.

First wheat flour off the mill.

I decided to do soft white wheat berries for my first go at milling. I chose this mainly because it is not a product that is easy to find on the shelves at the grocery store.

This is 100% organic 100% whole wheat pastry flour. It has low protein so it will be great for things like biscuits, muffins, some cakes, and things like that. It is great for savory applications too like dredging or making a roux.

Milling is an art in itself and I don't have anybody to teach me so I'm just stumbling along, but I'm learning as I go.

Proofing boards are essential to any baker. I was needing more, so instead of ordering online, I swung by Shappard Lumber here in Columbia.

Terrance agreed to make me some boards from some beautiful Okoume plywood he stocks in the shop.

These are a joy to use and I am so happy to have them as tools in my bakery.

Terrance sells local lumber that he mills on site, exotic woods, decking, siding, and more. He even sharpens anything that needs an edge.

I highly recommend stopping by if you haven't already.

Hey folks, as we get busier and with the farmers markets going, we are going to have limited bread on the shelves. My bakes are pretty much at capacity right now, so make sure you come early on our baking days to get what you need!

We bake sourdoughs on Tuesdays, Thursdays, and Saturdays.

Rooster Rocket New Sandwich Special starting tomo

Rooster Rocket

New Sandwich Special starting tomorrow.

We took inspiration from a Banh Mi for this one. Chicken breast, cabbage slaw, cucumber, cilantro, and our house made Rocket Sauce on our French Baguette. Super light and fresh.

The Rocket Sauce is a super creamy cashew based sauce. It is zingy and savory. This sandwich will come with some extra sauce on the side.

Also, its so close to being vegan, so we're getting in some tempeh. You can order it with tempeh instead of chicken for no extra charge.
