We're going to have to pause on pot pies after tomorrow until the temps drop.

This week's temperatures has made things pretty challenging at the bakery.

July 4th weekend schedule:
Open normal hours at the shop. 8am to 4pm
Open normal hours at the Saturday market 8am to noon
Following Tuesday and Wednesday (7/7 and 7/8) closed for cleaning and summer break.

This old building we're in is charming in some ways, but the lack of ability to properly condition the space makes production extremely difficult.

We can deal with physically working in 84+ degrees, but there's only so much we can do to manage the speed of fermentation and the softening of the butter in our viennoiserie.

We're probably going to run out of sourdough tomorrow, but we'll have plenty of baguettes.

Time to clear off the patio.

Although this oven started Prevail Bakehouse, it is currently not being used, so we are moving her away for now.

I think I'll be listing it for sale. She's a workhorse. 11,000 pounds of masonry, steel, and insulation. You could start a business with it. I did!

New batch of Einkorn just came out of the oven. Fo

New batch of Einkorn just came out of the oven. For this batch, we did 50% whole grain Einkorn that we milled here at the bakery. We blended this with a medium strength bread flour to give better baking performance.

It came out with great texture and flavor. We'll be selling this through the weekend.

We have our first tomatoes of the season in! These came from our friends at @bountifulblessingsfarm

We only have tomatoes on the menu when we can get them locally because we really don't like bad tomatoes.

Feel free to add them to any sandwich you like!

Starting July 3rd we'll be running a caprese sandwich. It'll have imported Italian Burrata which we'll pair with local tomatoes and pesto on a baguette.

This is a butter block for our croissants that we make from Plugra butter. The butter is great. It is super flavorful and has great baking characteristics. BUT, sometimes we get a case that is just different.

You can see here that the butter on the left is smooth and pliable, but the butter on the right is watery and shattered. Both are plugra handled in the same way, but from different cases.

We can compensate a little by using the butter warmer, but the dough doesn't really like to be warm.

Understanding that we are working with natural raw products is important. It means our products are not always going to be the same because the raw ingredients aren't always the same, and thats ok. It makes the good bakes worth celebrating because EVERYTHING was just right. From the raw ingredients, through the process, and to the end result.
