Pizza pop up tomorrow. In gearing up for launching our pizza night, we need to do some decent size dough tests.

Wednesday, July 15 we'll have 24 pizzas for sale.

These will be cheese or pepperoni on a sourdough crust.

No substitutions or modifications for now as we dial in the process.

Lots of fun new things here.

Matcha:
We now have Ooika matcha! We had this when we first launched our drinks, but with the crazy matcha boom and limited supply, we weren't able to get any for a while. Luckily Ooika has increased their production and they were able to supply us again.

This matcha is super premium. Grown in Uji, Japan an area known for superior quality tea. The tea destined to become matcha is grown under shade which thins the leaves and makes the leaves deep deep green. The best leaves are picked by hand and then dried. The dried leaves are shipped to New Jersey, where they are ground in small batches on a stone mill.

This level of quality and care is unattainable from other brands.

Mugi:
We came up with a new name for our cold brewed concentrate of chicory and barley. It translates as "grain" in Japanese. You can enjoy this as an iced or hot "coffee" for a non caffeinated drink option.

Coffee:
We have coffee now! We are doing a cold brewed concentrate with a special blend from Stone Street Coffee Company in NY. It is specially formulated to be deeply flavorful, but with low acidity. We've tested this as a simple hot or iced coffee, but also as a latte. It tastes great!

Lotus Drinks:
These are plant based energy drink syrups that are mixed with carbonated water to order. They are super refreshing and very versatile you can pick your own flavors or choose from a list of our signature creations that will rotate seasonally.

We are closed today and tomorrow July 7th and 8th.

We did a small bake for wholesale customers but we also made some extra for our regular customers. It's not the full line up, but there's a good amount of our Metro Sourdough out here.

Take what you need, pay what you can.

Days off for bakeries aren't really truly days off, so we'll be here on and off mixing and processing doughs to be ready to open Thursday.

This week's temperatures has made things pretty challenging at the bakery.

July 4th weekend schedule:
Open normal hours at the shop. 8am to 4pm
Open normal hours at the Saturday market 8am to noon
Following Tuesday and Wednesday (7/7 and 7/8) closed for cleaning and summer break.

This old building we're in is charming in some ways, but the lack of ability to properly condition the space makes production extremely difficult.

We can deal with physically working in 84+ degrees, but there's only so much we can do to manage the speed of fermentation and the softening of the butter in our viennoiserie.

We're probably going to run out of sourdough tomorrow, but we'll have plenty of baguettes.

Time to clear off the patio.

Although this oven started Prevail Bakehouse, it is currently not being used, so we are moving her away for now.

I think I'll be listing it for sale. She's a workhorse. 11,000 pounds of masonry, steel, and insulation. You could start a business with it. I did!
