Stone milled certified organic flour.

High extraction flour is milled whole and then sifted. A contrast to modern commercial flour which is separated into in components before milling. Milling the grain whole retains much more nutrition from the whole grain in the final product. This flour has baking properties similar to white bread flour, but with higher fiber content and nutritional value.

Take your time with this flour. It needs longer resting times to fully hydrate and to develop good quality gluten. Don’t try to beat it into submission and you’ll be rewarded.
